This technology involves frying at low pressure and lower
temperatures compared to conventional frying. This article discusses the implications of
using vacuum frying in increasing the added value of fruit and vegetable crops. The
literature study method used is literature analysis from various related journals
published in 2020 to 2024. The results of the literature study show that vacuum frying
has several advantages over conventional frying, including: (1) producing products
with lower oil content, (2) maintaining the original color, aroma, and taste of food
ingredients, (3) maintaining nutritional content, (4) reducing oil absorption, and (5)
produces a crispier texture. Vacuum frying has been successfully applied to various
fruit and vegetable commodities, such as banana, jackfruit, mango, papaya, orange,
salak, apple, yam, potato, mushroom, and asparagus. Literature studies show that
vacuum frying can improve the quality of processed products, both in terms of nutrition,
sensory, and shelf life. This technology also provides opportunities to develop new
innovative and value-added products. This technology not only provides economic
benefits for farmers and producers, but also contributes to the provision of healthy and
nutritious food for the community. Further research is needed to optimize the use of
vacuum frying on various commodities and develop innovative new products.
Abdullah Mujahid, Damat Damat, Noor Harini Copyright (c) 2025 Abdullah Mujahid, Damat, Noor Harini http://creativecommons.org/licenses/by-sa/4.0 https://journal.umpr.ac.id/index.php/daun/article/view/7483 Fri, 10 Jan 2025 00:00:00 +0000 Pengaruh Konsentrasi BAP (Benzil Amino Purin) terhadap Multiplikasi Subkultur Tunas Pisang Kepok Timbatu https://journal.umpr.ac.id/index.php/daun/article/view/7857
White kepok bananas are known to the people of Tabunganen District, Barito Kuala
Regency, South Kalimantan as kepok timbatu. Kepok timbatu bananas have the
potential to be developed as a raw material banana flour so they have the potential to
be widely cultivated. This will have an impact on the need for seeds on a large scale.
The need for banana plants itself has an obstacle, namely the limited availability of
plant seeds. The solution to overcome this problem is to use micropropagation
techniques. This technique can produce a lot of seeds in a short time. The success of
which is influenced by using cytokinin growth regulator, such as BAP. BAP is widely
used in tissue culture to stimulate shoot formation and multiplication. The aims of this
research were to determine the effect of BAP concentration and the best BAP
concentration on the multiplication of timbatu banana shoot subcultures. The research
was designed using a Completely Randomized Design (CRD) with one factor, i.e. BAP
concentration (3, 5, 7, and 9 mg L
-1
), with 5 replications for each treatment, so there
were 20 treatment units. Each experimental unit consisted of 4 bottles, so there were 80
planting bottles. Observations including time browning appeared, percentage of
browning, time shoots appeared, number of shoots, number of leaves, number of roots
and shoot height. The result showed that there was no significant effect of BAP
concentration to all observed variables.
Nofia Hardarani, Jessa Karina, Hilda Susanti Copyright (c) 2025 Nofia Hardarani, Jessa Karina, Hilda Susanti http://creativecommons.org/licenses/by-sa/4.0 https://journal.umpr.ac.id/index.php/daun/article/view/7857 Fri, 10 Jan 2025 00:00:00 +0000 Pengaruh Pupuk Kotoran Kambing dan Pupuk NPK Terhadap Pertumbuhan Sawi Pagoda (Brassica narinosa L) dan Derajat Kemasaman Tanah Gambut Pedalaman https://journal.umpr.ac.id/index.php/daun/article/view/7193
This research aims to determine the effect of goat manure and NPK fertilizer on the
growth of mustard pagoda and the degree of acidity on inland peat soils. This study
used a Factorial Complete Randomized Design consisting of 2 factors and 3
replications. The first factor was goat manure which consisted of 4 levels, namely 0
tons / ha; 25 tons/ha; 35 tons/ha; 45 tons/ha and the second factor was NPK fertilizer
which consisted of 3 levels, namely 200 kg/ha; 300 kg/ha; and 400 kg/ha. With a focus on household food security, sweet potato was
selected as the crop due to its ease of growth and adaptability to various environmental
conditions. Additionally, sweet potatoes can be successfully cultivated in sacks. The
yield includes both tubers and leaves, which can be consumed as healthy vegetables.
The primary objective of this research was to analyze the productivity of sweet potatoe s
grown in sacks, and to examine the relationship between harvest variables and yield
prediction. An experimental and descriptive research methodology was employed.
Regression correlation analysis was conducted to determine the relationship between the
number of tubers and the total weight per sack, as well as to estimate the potential yield.
The results indicated a sweet potato productivity of 1.4 kg per 40 kg sack, with 10
cuttings per sack. A strong positive correlation of 96.77% was found between the
number of tubers and the total tuber weight per sack, represented by the regression
equation y= 71.069x-878.93. Similarly, a strong positive correlation of 83.05% existed
between the number of tubers and the weight of each tuber, suggesting that an increased
number of tubers did not decrease the weight of individual tubers, as shown by the
regression equation y=1.6985x -9.87. If a household has 10 sacks, the potential yield
would be 14,000 grams or 14 kg of sweet potatoes, providing a valuable source of
healthy vegetables for the family.
