Abstract
The food MSMEs play a vital role in supporting the local economy. However, MSMEs still face various challenges in the production process. Waras MSME, which produces otak-otak, faces challenges including the lack of implementation of Good Manufacturing Practices (GMP) and rising production costs. This increase is due to rising prices for tapioca flour and plastic packaging, driven by global economic conditions and international conflicts. This community service activity aims to educate Waras SMEs on GMP implementation and provide guidance on strategies for production efficiency. The implementation methods include observation, socialization, activity preparation, GMP education, guidance on production-efficiency strategies, and activity evaluation. The results of the community service activity show that Waras SMEs received GMP education and obtained guidance on production efficiency strategies. The impact of the activity is that SMEs have begun to implement more hygienic production processes, more organized product arrangement, and maintenance of production machinery. Additionally, production capacity increased from 9 to 15 batches per production run, and production frequency increased from once every 3 days to once every 2 days. This community service activity has a positive impact on the quality of production processes, business efficiency, and the sustainability of SMEs amid rising production costs.
